I found a female Cleric trapped a cell in the moathouse after I killed the ogre. She mentioned that her partners don't like joining other groups. Afterwards, Nybble gave me a ring and then left. Is there a way to recruit her or will I find her later in Hommlet?
You won't find her in hommlet, but she is not recruit-able. The guide takes an hour or so to read, it is really helpful.
If you remember what Nybble said about her, she might not be a "great" addition to any party that might expect their cleric to do anything other than freeze up during battle. What did he call what she was suffering from?
No, I think he put it more like she just froze up and was the main cause behind them getting captured.
He never said she froze up, just that she stopped healing them. This could mean anything from running out of spells to being attacked by another enemy/knocked out.

I've always thought the guy attacking the ogre was the demented one. IIRC, the stats of everyone in that party is straight 10's. But I've often thought they should be joinable.
